I <3 railroads. I grew up at right at the yard limit in my hometown. It was 24/7, two rails, nothing but back-to-back trains. Trains are awesome.

We always have blackeyed peas New Years Day for dinner - along with cabbage and cornbread. What you have there looks delicious.
